Avocado Mint Chip LOVE Bars

Avocado Mint Chip Bars

I ran into a friend at Trader Joe’s and she told me I had to try this recipe that had avocado and coconut in it (as she knows I have food allergies).  She didn’t have the recipe, so I googled it, found a recipe here at Raias Recipes and made some modifications.  The original recipe creation is not my own, but it does have A LOT of my favorite ingredients in it.  I did make a few changes to fit my Naturalita preferences!

 

Naturalita Inspired Ingredients
Avocado Mint Chip Love

  • 1 Perfectly Ripe Avocado
  • ¼ cup honey (raw and local)
  • 6 Tbsp organic coconut oil (melted)
  • 1 ½ cups unsweetened organic coconut
  • ½ teaspoon organic mint extract
  • 3 Tablespoons raw organic cacao nibs

Natural Chocolate Topper

  • ¼ cup organic coconut oil
  • 2 Tbsp raw honey
  • ¼ cup raw organic 100% cacao powder
  • Pinch of Himalayan pink salt
*I always use organic where possible.

Create it Naturally!
Avocado Mint Chip Love Layer

  1. Put avocado, honey, and melted coconut oil into a food processor. Add organic mint extract.  Process until mixed well.
  2. Slowly add in unsweetened dried coconut, “pulse” until mixed well.
  3. Add in raw cacao nibs and give it a couple of pulses in the food processor.  Be careful not to blend too much so you still get the chocolate “chips”.
  4. Scoop mixture into a 9×9 glass pan.  Level out the ingredients so everything is flat.
  5. Cover and put into the freezer.

Naturalita Chocolate Layer

  1. Mix/Process melted coconut oil, honey and cacao powder in the food processor. (Cleaned from Avocado Chip step).
  2. Process until well blended evenly.  Taste it.  Because you can.
  3. Add chocolate layer to the top of the Avocado Chip layer and put back into the freezer for at least 20 minutes.  Everything will harden.
  4. Take out and let sit for about 5 minutes before cutting into bars.
  5. Take a picture to prove you made them.  Tag me.
  6. Store leftover bars in the freezer.
  7. Enjoy your Naturalita inspired avocado filled treat!

Warning:

You will be tempted to eat the whole pan!

    • Well hello, lovely Raia! I LOVE your recipe and of course, had to link back, not sure if I did it correctly, but wanted YOU to get the street cred for it! I LOVE avocados more than anything, plus dark chocolate and COCONUT, so your recipe was like my ultimate love food. So thank YOU for sharing it! Yes, I am pretty sure I ate most of the pan, I don’t have kiddos to help and the man didn’t have much of a chance. Thank you again!

    • Hi Kelly! They are so yummy! Yes, to travel, I would recommend having them in a glass container and having some ice with you (if on the road). Since the coconut oil melts or softens at a low temperature (liquid at around 75 degrees) a cooler will work great! Baggies should work, but they might get gooey, so I recommend a small glass container (I only use glass). 🙂 Let me know when you make them!
