Slow Cooker Coconut Pumpkin Chicken

I enjoy cooking and getting creative in the kitchen.  We recently invested in our FIRST crock-pot.  I guess I can’t call it a Crock-Pot, since it’s not that brand (it’s a Cuisinart, I have this one) so SLOW COOKER is what I will call it. More like, convenient amazing “can’t mess up a recipe” cooker.

I don’t have a lot of mouths to feed daily,  (human mouths) however, making a couple meals a week in this baby feeds us for over a week.  (I don’t mind leftovers, I really like easy meals.)

My first REAL meal experiment in the slow cooker was my Coconut Pumpkin Chicken.  I am terrible at following recipes, but have since made this twice and wrote the recipe down after it turned out, so wanted to share to see if others would enjoy it this Fall!  (I basically look at 5-6 recipes for inspiration and follow NONE of them exactly.)

If you like coconut + pumpkin + chicken + sweet potatoes then this will be a hit in your home!  (In the ingredients list, I used organic for almost everything, as that is a choice that I make and believe in having organic high quality ingredients to nourish my body; I did leave the ingredient list with that note.)

Slow Cooker Coconut Pumpkin Chicken

  • 2.5 pounds free range chicken breasts (thawed)
  • 1 14 ounce can of pumpkin
  • 1 14 ounce can light coconut milk
  • 1 cup vegetable or chicken stock
  • 3/4 cup chopped yellow onions
  • 4 cloves chopped garlic
  • 3 cups chopped sweet potatoes (about 1″ cubes)
  • 3 chopped carrots (Regular size carrots. I cut diagonally and make them thick)
  • 1 Tbs curry powder
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • Himalayan pink salt and black pepper – to taste

Create it Naturally and SLOOOWLY

  1. Combine pumpkin, coconut milk, chicken stock and spices together in the slow cooker. Mix well.
  2. Add onions, garlic, sweet potatoes and carrots.  Mix well.
  3. Add chicken breasts.  Mix everything together.
  4. Cover and cook for 6 hours on high.
  5. When done cooking, take chicken breasts out, shred into smaller pieces and put back into slow cooker.
  6. Serve warm over chopped fresh greens. (I put it over kale, baby kale, baby swiss chard and spinach or with a side of broccoli or broccolini.  I love putting it over fresh greens as greens can get overcooked in the slow cooker and slowly cook with the warmth of your fresh meal on top.)
