Paleo Pumpkin Pancakes

{Gluten Free. Dairy Free. No Sugar. Grain Free. Paleo. Delicious.}

I’ve been strictly gluten free for over 8 years.  Prior to taking out gluten, I had terrible unexplained stomach pains, numerous tests and, well, nothing that the Doctors did or told me helped, so I went out on my own journey, took out gluten (breads, cakes, cookies, muffins, cereals, soy sauce and many other things that contain wheat or the gluten protein).

At first, I would “cheat” and slip in a little of my grandma’s delicious cake or a cookie or two, but my stomachaches would appear immediately or within 2-3 days. It was NOT worth it. From there, I went cold turkey and never looked back. It doesn’t mean I don’t miss breakfast foods like pancakes, muffins and cinnamon rolls.  Though there are gluten free options, they are still loaded with “crap” and a lot of sugar.

Since I have been eating very strictly Paleo for about 8 weeks now and have yet to add sugar into my diet, I wanted something different, so I experimented with pancakes.  I have made this recipe a couple of times and finally found the best recipe tonight!

If you like pumpkin and cinnamon, you will like these pancakes.

Naturalita Ingredients

(This recipe makes 2 servings, though it is easy to eat them all!)

  • 3/4 cup Organic Canned Pumpkin
  • 4 Organic Eggs
  • 2 Tablespoons Coconut Flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 2 Tablespoons coconut oil
  • Himalayan Pink Salt (to taste, optional)

Create it Naturally

  1. Whisk pumpkin and eggs together in a medium sized bowl.
  2. While mixing ingredients, melt coconut oil in pan on medium low heat.
  3. Add coconut flour, cinnamon and baking soda to the egg and pumpkin mixture.
  4. Whisk and make sure everything is combined. Pour in melted coconut oil from pancake pan. Mix.
  5. Pour pancake mix into pan (medium low heat).  Flip when one side gets bubbly and cook for 1-2 minutes on the other side.
  6. Once cooked, top with coconut oil, pumpkin puree and cinnamon.  If you want to add a little sweetness, you can add pure maple syrup.
